Cooking with Slow Food
Join Remle Colestock and Slow Food in the Tetons for an interactive cooking workshop experience. Remle will walk us through using fresh local ingredients to create beautiful, delicious meals that are approachable for both budding and experienced chefs alike.
Whole Bird Breakdown & Parting Workshop
Learn how to make the most of a whole chicken – nothing goes to waste. This hands-on (or watch-and-learn) workshop will walk you through how to break down a whole bird for multiple uses:
- Breasts and tenders for quick family meals
- Legs and thighs for curing, confit, and preservation
- carcass and trimmings for rich, homemade stock or broth
Discover simple methods to stretch a couple of chickens into meals for weeks, while gaining skills you can use again.
Participants will have the opportunity for hands-on practice, or simply observe and learn. A few samples will be available to take home.
Remle Colestock is Executive Chef at Glorietta, where he focuses on handmade pasta and wood-fired cooking paired with expertly crafted cocktails. The menu folds in local ingredients to create curiously delicious meals all while paying homage to Italy.
